Menu Planning Monday

I thought I'd do something fun and join in on the public announcement of our week's menu plan...

I have a confession....Pinterest is my go-to menu. Most, if not all, of these recipes came from Pinterest. Is that sad? It's just so easy and I have found some keepers! I've even stared a board called "Foods I make on a regular basis!" Follow if you like! :)

(I'm not sure on what the "rules" are for pictures and on sharing other people's pics...and I always forget to take my own or don't feel like messing with it because I am not a photographer...so... sorry for lack of pics and please enjoy the few that I took!) :)

So here is a peak at our menu for this week:

Baked Sweet and Sour Chicken - The whole family LOVES this recipe and the chicken is so addicting! I sometimes double the recipe so that there's enough for lunch the next day! The fried rice recipe in the link is pretty good too!

Taco Pizza - I can't wait to try this one! It looks so good!

Honey Garlic Pork Chops - Also a new recipe that I can't wait to try!

Baked Cream Cheese Spaghetti - This is the only way to make spaghetti now! YUMMY!!!

For dessert today I made a pumpkin chocolate chip bread. It doesn't taste a whole lot like pumpkin bread and wish it did. So...might need to mess around with the recipe. I took a pic after Lincoln and I took a taste test. Lincoln says it passes. But Joe, and the other hand, doesn't like that it doesn't taste like pumpkin bread.

 

On Sunday I didn't go to church because of two little ones with the sniffles, so I made some frozen breakfast burritos. This is a first and I enjoyed the ones that my mom made last week, I had to try myself! I made egg, ham, and cheese burritos and hope to try other kinds in the near future! It's so easy with a quick pop in the microwave and they're ready to go!




Another fun thing to make is baby food! This week I was able to pull out my Sage Spoonfuls box that I won in a twitter party and put it to good use! I had won the "Let's Get Started Package" and after the first try, I LOVE it!!!! 


And so does Beckham! We made some apple puree!!!


Not that you really care what we are eating this week... But if you have a go-to recipe that never fails, or have a fun baby food recipe that you think I should try, please share! If I pick yours, I'll try it and blog about it! :)

A look into our week

Who doesn't love Pinterest? Besides the fact that it tends to steal hours upon hours from you and it's SO addicting!!!! 

Well, I found a few recipes that I couldn't pass up and wanted to try. I don't usually take pictures, but since I'm in a blogging mood, I couldn't blog this without taking pictures! :)

You can find the recipe for these Breakfast Sandwiches in the link. I actually made them for supper and froze the rest for later! We were in a "breakfast for dinner" kind of mood that night!

 The cooked eggs in my muffin tin! I had beaten them a little bit just so that the yolk was broken up.

 I even cooked the bacon in the oven this time! I've never done that before and I'm never going back to stove top bacon cooking! :)

I froze the egg, bacon, cheese, and muffin separately before I wrapped together. Wrapping them brought back memories of working in the sub shop at the gas station in my home town. 

We ate our "breakfast for dinner" with bagels instead of muffins and they were AWESOME!!! I love finding recipes that Joe likes and Pinterest has been a HUGE lifesaver! (I'm one that tends to make repeat meals week after week because of lack of ideas and or creativity!) So, I'm adding this one to the list of a successful meal to make again!

And the rest of the day was spent outside! Can not believe the beautiful weather we're having! And to think that it's the same temperature in Michigan as it is here! WOW!!! Hope it lasts for a little while and we're not in for a HOT summer!

Crock-pot cooking and 365-10

Some days I get the urge to create something scrumptious and I get all excited when all the ingredients come together, the smells make my mouth water, waiting patiently to taste that first bite of my new creation!!! But all too many times it ends in FAILURE!

I can cook somethings. Well...(My hubby can tell you what meals I use and abuse over and over!)
I love to eat...
My favorite appliance is the Crock-pot...

So I SHOULD be able to make new things every now and then, right?!

Looks pretty easy, don't you think?
Here's how mine turned out...I Call it:
SLOPPY CHICKEN MUSH...


I did do some things differently...maybe you can tell me where I went wrong...

1. I used cream of mushroom when it called for cream of chicken (why would that matter? And I couldn't find cream of chick. at Aldi)

2. Aldi didn't have the wild rice instant stuff I was looking for. So I just used chicken flavored instant rice... (I think I'm noticing a pattern here. I'll blame Aldi for my bad cooking!)

3. I used baby carrots instead of 4 regular carrots. :)

4. I cooked it on low for most of the time, and then turned it to high for the last hour...(that seemed to burn the sides a little...)

5. Right before I served it, I tore up the chicken into bite size pieces... It looked a mess anyways...why not give it some more character?!

It came out real sticky and thick. Almost gravy like. Nothing like the picture in the cookbook. No Creamy Chicken here. I think something was messed up with the instant rice packet/seasoning, where I probably should have used more water.
The picture that you see here, is lunch the next day. So it got thicker the older it was! Joe said it was good. (which means...it's ok...) I thought it tasted fine. Lincoln ate his plate...But it just doesn't look the greatest! And that's how most of my first-time-attempt meals turn out.

Today I'll blame Aldi and a crock-pot that cooks a little too hot! :)

I'm NOT gonna tell you about my Indian Fry Bread story...(whaaahahaha) :(
